- 1/4 cup of granulated sugar
- 1/4 cup of unsalted butter, melted
- Cooking oil (vegetable or canola) for frying
- Optional toppings: chocolate syrup, honey, whipped cream, and maraschino cherries
Instructions
- Using an ice cream scoop, form four even-sized balls of gluten-free vanilla ice cream. Place them on a parchment paper-lined tray and return them to the freezer for at least 1 hour, or until they are very firm.
- In a food processor, pulse the gluten-free corn flakes until they are finely crushed. Transfer them to a shallow bowl.
- Combine the shredded coconut and ground cinnamon in another shallow bowl.
- Remove the ice cream balls from the freezer. Roll each ball in the crushed corn flakes, pressing the coating onto the ice cream to ensure it sticks.
